As a child Dar’s parents would gather her and her siblings and they would set up chairs and blankets in their back yard to watch the Northern Lights in the Saint Lawrence Valley under cold, clear skies. As an adult she got to witness them in their greenish phantasmagorical glory marching across the sky while living in Northern Sweden near the Arctic Circle. In Vermont they make faint glittering appearances, and lately spectacular deep red and pink bursts, best seen in a field or forest clearing away from town lights. These bars and tablets were inspired by their mysterious presence, flavored to echo the experience of viewing them from points North on a brisk wintry night.

Large 3 oz. chocolate tablets and small 1 oz. bars are made with 65% dark Ecuadorian chocolate scattered with ground wild Vermont peppermint, Vermont foraged spruce, earthy matcha green tea, and sparkly Atlantic flake sea salt flakes from SalterieOne like a scattering of stars.

Each 1 oz bar or 3 oz tablet is wrapped in clear cellophane with a slim ivory band so the beauty of the ingredients shows through.

Our chocolate bars are made without preservatives and the freshest, finest ingredients, many sourced from the fields and forests of Vermont. With this in mind many are made to order, so please allow three to five business days for us to make them before we ship them out to you!

Solid chocolate bars are at their optimal flavor and texture if consumed within 3 months of their creation, and can be stored and enjoyed for up to 6 months. Store chocolate bonbons in a dark, cool, dry place, best temperatures between 60-70ºF.
